Method

Soak rice noodles in hot water for 5-7 minutes until softened, then drain well. Heat oil in a wok over high heat, add the curry powder and stir-fry for 30 seconds until fragrant. Add the prawns, char siu, bean sprouts, and spring onions, tossing for 2 minutes. Add the drained noodles and a splash of soy sauce (optional), stir-frying for another 2-3 minutes until everything is heated through and combined.
