Method

Heat oil in a large wok over high heat. Add chicken and stir-fry for 5-6 minutes until cooked through, then add the capsicum and cook for another 2 minutes. Add the chilled rice, soy sauce, and fish sauce, stir-frying and breaking up clumps for 5 minutes. Stir in the pineapple chunks and cashews, cooking for 1 minute more to heat through before serving.
