Method

Heat oil in a wok over high heat and sear the beef slices for 1-2 minutes until browned; remove and set aside. Add the onion and capsicum to the wok, stir-frying for 3-4 minutes until softened. Return beef to the wok along with the udon noodles, oyster sauce, soy sauce, and a generous amount of black pepper.
