Cook soba noodles as per packet instructions; drain and rinse with cold water. Pan-fry salmon fillets skin-side down in a non-stick pan over medium-high heat for 5-6 minutes until the skin is crisp, then flip and cook for another 2-4 minutes. Brush generously with teriyaki sauce in the last minute of cooking. Toss the cold soba noodles with edamame and cucumber, divide between two bowls, and top with a teriyaki salmon fillet.
