Cook ramen noodles according to packet directions, omitting any flavour sachets; drain and set aside. Heat sesame oil in a wok over high heat and stir-fry the pork mince for 5-7 minutes until browned and cooked through. Stir in the chopped kimchi and gochujang paste, cooking for 1 minute until fragrant. Add the cooked noodles and spinach to the wok, tossing everything together for 2-3 minutes until the spinach has wilted and noodles are well coated. Serve immediately.
