In a medium saucepan, bring beef stock, soy sauce, and Chinese five spice to a simmer. Add the beef strips and cook for 2-3 minutes until just cooked through. Add the udon noodles and bok choy to the pot, cooking for a further 2 minutes until the noodles are hot and the bok choy has wilted. Divide between two bowls and garnish with fresh coriander to serve.
