In a small bowl, whisk together soy sauce, honey, ginger, and garlic. Heat sesame oil in a wok or large frying pan over medium-high heat; stir-fry chicken for 5-7 minutes until golden and cooked through. Add broccoli and capsicum, stir-frying for another 3-4 minutes until tender-crisp. Pour over the sauce and add cashews, tossing to coat everything well and heat through for 1 minute. Serve hot over a bed of fluffy jasmine rice.
