Method

Preheat oven to 180°C. Rub butter into flour to make breadcrumbs, stir in some sugar and water to form a dough, then press into a pie dish and bake for 15 minutes. For the filling, combine cornflour, sugar, lemon juice and water in a saucepan and cook until thickened, then whisk in egg yolks. For the meringue, whisk egg whites and sugar until stiff peaks form. Pour filling into the pastry case, top with meringue and bake for 20 minutes.
