Method

In a large bowl, combine the flour, milk, egg, and half of the vanilla extract until smooth. Heat a non-stick frying pan over medium heat. Pour 1/4 of the batter into the pan, tilting it to cover the base. Cook for 2 minutes or until the crepe is ready to turn, then flip and cook for another 1 minute. Remove to a plate and cover to keep warm. Repeat with the remaining batter. To make the creamy berry filling, stir the yogurt and the remaining vanilla extract in a medium bowl. Gently fold in the berries. To serve, fill each crepe with creamy berry mixture, fold over, and garnish with additional berries if desired. Enjoy this light, flavourful Australian breakfast!
