Method

Preheat your oven to 180°C. Cream the butter and sugar together until light and fluffy. Beat in the eggs one at a time, along with the vanilla extract. Fold in the flour. Roll the dough into small logs and twist them. Place on a baking tray and bake for 15-20 minutes. Once cool, dip the twists in a simple icing made from the icing sugar and a little water, then roll in the coconut.
