Method

Heat a wok over medium-high heat (no oil needed for duck). Add the shredded duck and cook for 2-3 minutes until heated and the skin is slightly crisp. Add the bok choy and stir-fry for 2 minutes until just wilted. Add the Hokkien noodles and hoisin sauce, tossing everything together for 3-4 minutes until the noodles are hot and evenly coated. Stir through spring onions before serving.
